Can I assume the same night premium at every employer?

No. Ask for the convenio and pay rules for nights, overtime, Sundays and public holidays. Obtain an itemised ordinary-month example. A previous employer’s premium or a Czech surcharge is not evidence of the Spanish entitlement.
